I have been making these brownies since I was 7 years old. I still have a scar on my ring finger where I burned it taking these brownies out of the oven when I was 8. They aren’t the dark chocolate fudgey brownies I’ve found a million recipes for and love. These brownies are more like a chewey milk chocolate that allows you to keep coming back for just one more little bite. My pictures include cherries because I had a bag of cherries that needed to be used sitting in my refrigerator. I pitted the cherries and chopped them up to include in the brownie batter. Autumn in New Mexico is the best season. The beauty of this beautiful state seems to shine during this time of the year. Although, the smell of roasting green chile is prevalent I stand by red chile. Here is my favorite recipe for red chile. Enjoy!
Red Chile Sauce with Pork
Prep time 20 mins Cook time 6 hours Total time 6 hours and 20 minutes
Makes about 4-6 servings, depending on how you use the chile
- 20-30 red chile pods (I buy the medium heat)
- 2 cups of chicken broth
- 4 garlic cloves
- 1 tbsp of salt
- 1 lb of pork (I buy the boneless pork chops)
- 1 tbsp of olive oil
- Using kitchen scissors cut off the top of the pods and shake out the seeds
- In a large pot blanch the chile pods for 15 minutes (reserve 2 cups of the cooking water).
- Drain the chile pods in a colander and then place into a blender.
- Add the 2 cups of chicken broth and blend.
- While blending add the salt, garlic cloves, and 1 cup of the reserved cooking water.
- Once the mixture is well blended place it in a fine mesh strainer over your crock-pot
- Using a spatula start lightly scraping and stirring the mixture to push it through the strainer (this takes about 5 minutes and you will be left with red chile pulp in the strainer)
- As the red chile strains place the olive oil in a large saute pan and heat it before placing the cubed pork in the pan.
- Quickly sear the pork before placing it in the crock-pot with the chile.
- Cook in the crock-pot on low for 6 hours.
- Serve alone as a stew, or over beans, enchiladas, etc.
It seems like everyone has a favorite baked pasta dish and we are no exception. We love baked pasta in any form, however my hubs is a big fan of protein so we use plenty of beef, pork, chicken, or turkey. For this dish I have used hamburger however you and substitute any ground protein. We like to serve this dish with garlic bread and a tossed salad. Yummm!
As some of you know, I’m a fan of keeping things simple. For the Bolognese sauce I use Trader Joe’s Bolognese sauce and I keep several jars in my pantry at all times. I can’t say enough about how good this sauce really tastes, and frankly I can’t tell the difference between this sauce and homemade other than the time homemade Bolognese sauce takes to make. Seriously!
In all honesty, bananas are my least favorite fruit. I buy them because I do like them in my morning smoothies and it they are great go to when you need an on-the-go breakfast. Because bananas are not my go to choice when picking through my fruit bowl there are always about two bananas that get too ripe to eat. Then, the guilt sets in that I am wasting food. This is the most delicious pie in the world. Thanks to modern technology you can make it at any time during the year but it so perfectly captures summer. The super sweet berries are balanced by the tartness of the Granny Smith apples, fresh squeezed lemon juice and rhubarb.
